Now a Sausalito, California institution, Copita was founded by celebrity chef Joanne Weir. The restaurant’s central theme is tequila which is the basis for the creation of this jimador painting. The jimador is a venerated laborer in Jalisco, Mexico who harvests the agave piña which ultimately becomes the wide varieties of tequila served at Copita.
